Sopa de Feijão à Portimonense (White Bean Soup à Portimonense)

Ingredients (serves four):

400 grams white beans
100 grams pumpkin
50 grams onions

1 dl olive oil
200 grams potatoes
200 grams sweet potatoes

1 sprig of parsley
salt

Soak the beans in cold water for 12 hours. Cook it in a pan with cold water. Clean the onion, wash and add to the beans. Add the oil and the parsley, season with salt.
Peel the potatoes and the pumpkin and wash them. Cut them in very small dice. When the beans are almost cooked, add everything to the pot. Continue cooking until ready. Rectifique the seasoning of salt.
This soup should be a little bit thick.
