Carapaus Alimados   (Boiled Horse-Mackerel)

Ingredients (serves four):

800 gr. fresh, small mackerels
2 dl. of olive oil
1 dl. vinegar

100 gr. onions
3 cloves of garlic

1 bunch of parsley
Coarse salt

Prepare the mackerels, removing the guts and the head. Wash them well in water. Using the coarse salt, arrange the mackerels in layers alternated with salt. Leave them for about 24 hours. Remove the salt and wash them in cold water.
Cook the mackerels in water and when done put them in cold water. Clean the skins, the scales and some spines of the belly.
Put the mackerels into the bowl where they will be served in, sprinkle with olive oil, minced garlic, sliced onion, vinegar and minced parsley.
