Carapaus Alimados (Boiled Horse-Mackerel) |

800 gr. fresh, small mackerels |
100 gr. onions |
1 bunch of parsley |
Prepare the mackerels, removing the guts and the head.
Wash them well in water. Using the coarse salt, arrange the mackerels
in layers alternated with salt. Leave them for about 24 hours. Remove
the salt and wash them in cold water.
