Amêijoas na Cataplana (clams, sausage, tomatoes, onions, etc. cooked in a sealed, clam shaped, copper pan)

Ingredients (serves four):

1,5 kg ameijoas
5 cls olive oil
300 gr. of fresh tomatoes
2 cloves of garlic

150 gr. onion
100 gr. chorizo
60 gr. Smoked ham
1dl dry white wine

1 bay leaf
1 sprig of parsley
Pepper
Salt

Some hours before: wash the ameijoas well in cold water and cover them with salted water. Cut the onion in big pieces. Mince the garlic very fine.
In a pan, heat the olive oil. Add the garlic, the onion, the bay leaf, and the parsley. Simmer. Add the white wine and reduce (simmer). Dice the ham in small pieces and put into cold water. Slice and cut the chorizo in halve moons. Skin and clean the tomatoes, Cut them in small dice and add everything to the pan.
Simmer 5 to 10 minutes.
Remove the parsley and the bay leaf. Remove the ameijoas from the salted water and wash again in cold water.
Put the cataplana on the fire and put a layer of the contents of the pan. On this layer place the ameijoas and cover with the remaining contents of the pan. Close the cataplana and simmer on a low fire until ready.
