3 kg. new unpeeled peas
A sprig of parsley
150 gr. onion
1 dl. olive oil
100 gr. pork fat
100 gr. chorizo
4 eggs
Salt
Pepper
Shell and wash the peas. Mince the onion. Cut the chorizo
in fine slices, after having removed the skin.
Put oil, fat, onion, chorizo and the sprig of parsley in a pan and sauté
until the onion is golden.
Add the peas and simmer for some minutes. Cover with water. Season with
salt and pepper, close the pan, and simmer gently.
When done, remove the parsly.
Finally, one by one, break the eggs, put them on top of the peas, and
poach them.
